My love affair with Vietnam is no secret. Chilling out on the beach only to then ride back into town to eat delicious food? OH IF I MUST!
I’ve never really been one to fist pump at the prospect of salad. I do believe it was a Simpsons episodes that coined the phrase “You don’t make friends with Salad”.

This recipe and it’s salad are an exception to that phrase.

Light, tangy and just flat out delicious – eating this healthy meal is one of perfect examples of eating healthy and loving every yummy morsel.

Garry has submitted this awesome recipe for us all! Huzzah! Served ideally as a side to compliment a nice piece of poached chicken breast. This is an easy yet very delicious meal. Try it!

This side dish is a fantastic alternative to rice or pasta for dishes. You can add additional garlic or spices to taste also. I add in Red Kidney Beans just to get more more low energy carbs and protein into my meals. You don’t taste them and they do add some colour! You can also add some spring onions too! Be Creative!

This stew really is comfort food for winter. It has flavour, it has heartiness and it’s just yummy to the max. It’s versatile to match up with other side dishes and salads also. This one does take a bit longer to make so I would TOTALLY recommend making the Epic Roasted Veges at the same time and also the Cauliflower Rice too. They work together so perfectly and it’s a serious hit of GOOD veges and meat!

Curry is actually quick and easy to make – when you know how of course! When you get your mad skills on point, you can have this one made in about 10 minutes flat! You can make it as hot or as mild as you like and if you are having it inside your metabolic window, you can have it with rice!

Slow cookery goodness! This recipe is so easy to put together and it tastes so hearty. You can add extra veges if you like just be mindful of how much space your slow cooker has! đŸ™‚

Casseroles are ever so simple to make and we like simple. We’ve got enough going on in our everyday lives so having a yummy and nutritious meal that we can prepare is definitely a must!
This is one of those recipes where having a slow cooker is AWESOME. Spend 10 minutes getting your ingredients prepped and then set it, go to work come home and enjoy ever so tender chickeny goodness!

If you want to make this meal OUTSIDE the Metabolic Window, Swap out the Potato and put in the equivalent serving of Pumpkin instead.

The secret to this is the silicone tray which is not only non-stick, (when the minini-quiches cool down and shrink a little they lift straight out) but it doesn’t need any oil, and is super easy to clean.

Before getting ready for work in the morning, preheat the oven to 200 deg celsius and prep the ingredients. While it’s cooking, shower, get dressed, whatever, and a quick, nutritious breakfast is ready to go when you are!

Stir-fries are all kinds of awesome. They are flavoursome and you can mix and match the contents to suit your tastes.
This one is healthy and full of flavour.

Rissoles are a nice easy meal to make. Yummy and quick. We like that.
These ones have a slight south east Asian flavour to them and are great to mix in with various other veges to go on the side. If you are eating these inside your window.. add a high energy carbohydrate on the side!

Rissoles are so easy to make and given that Turkey Mince is quite cheap.. they are economical oh and very yummy indeed!
Combined with a salad, these rissoles are perfect for a summer evening and are a go to meal for eating outside your metabolic window. If you are looking to have these inside your window – no problem! You can just add a high energy carb onto the side! Mashed Potatoes would be a hit… BUT only if you are having them inside your window đŸ˜‰

There’s nothing like walking into a kitchen where you can smell the deliciousness of what you’re cooking. Pumpkin is just one of those foods that likes to tease you when it’s almost ready!
Now this particular recipe is sparse on the ingredients but plentiful in taste. There are other veges you can add to this but the core elements will be Brown Onions, Carrots and Pumpkin.
Now as to how long you cook this yummy meal is going to be dependent on how good your oven is and also how thick you cut your pumpkin. It will take some practice with what works best with regards to time and cutting so practice makes perfect!

There’s a reason as to why I have a soft spot for south east Asian dishes. Quick. Easy. Delicious. So full of flavour and they are also great to have a left overs for the proceeding days!

This filler was something I randomly created because well.. I hate our pantry and I had no idea what as in it. Al is effectively the gate-keeper for the pantry and I struggle to know what the spices are half the time. I am getting better though!
This protein component meal works AMAZINGLY well with the Epic Super Salad. Cook up the Moroccan Style Turkey Mince and then combine it with the Epic Super Salad. Incredibly tasty and very nutritious while being very quick to make!

You know those meals where they taste sooo soo good and you just LOVE when they are on the dinner agenda? This is one of them. So healthy and so easy to make! These can be made with both the inside and outside window in mind. If eating inside the window, use the tortillas and wraps. If outside – don’t use the tortillas and wraps and just mix the filling and toppings together on a plate!

Great food in my mind means that it is versatile in its consumption. Can I mix and match it with different tastes and ingredient s and still get a healthy and nutritious meal that is in line with my goals? You know.. that sort of thing!

Well this salad is pretty much this. Super easy to make. Super easy to store. Super easy to match it up with other flavours and still get a great tasting meal.

I’m not gonna lie – I *love* pumpkin. LOVE. IT. It’s such a nutritious and yet low energy vegetable and it tastes delicious. So it stands to reason that these little gems taste fantastic and are very versatile in when you choose to eat them. They won’t last long though! đŸ™‚
