You know those meals where they taste sooo soo good and you just LOVE when they are on the dinner agenda? This is one of them. So healthy and so easy to make! These can be made with both the inside and outside window in mind. If eating inside the window, use the tortillas and wraps. If outside - don't use the tortillas and wraps and just mix the filling and toppings together on a plate!

Ingredients
- 1 tbsp Extra Virgin Olive Oil Or use Canola Spray
- 500g Turkey Mince (or Chicken / Lean Beef)
- 1 Brown Onion Chopped
- 1 can Red Kidney Beans drained & rinsed
- 1 can Diced Tomatoes
- 1-2 Cloves garlic crushed & chopped or use Garlic Mince
- 1 tsp Rock Salt
- 1 tsp Cumin Seeds
- 1 tsp Dried oregano
- 1 tsp Coriander
- 2 tsp Paprika
- 1 Avocado Diced / mashed whatever you prefer
- 1 Tomato Chopped
- 1 Sm/med Capsicum Chopped/Diced
- 1 cup Spinach Shredded
- 1 Sml Lime cut into wedges
- 100ml Low Fat Greek Yoghurt Can replace with Cottage Cheese
- Coriander Chopped fresh
- 1 stalk Spring Onion Chopped

- Slightly warm the Multigrain tortillas or wraps (if you are eating outside your MP window – you can ditch these!)
- Sauté onion & garlic in a small glug of virgin olive oil (or a spray of Canola Oil if fat intake is of concern!) on high heat just until fragrant & lightly golden.
- Add mince & brown well. Keep breaking down clumps. Cook right through (turkey mince should take on some colour & caramelisation).
- Add spice mix and fry off spices until it begins to catch on the bottom of the pan and browns.
- Then add kidney beans and canned tomato and mix through.
- While allowing the Burrito filling to simmer, do the preparation of your toppings. Chop and dice!
- Lower heat & let simmer until most of the liquid has cooked off and the burrito filling looks ready to spoon into a tortilla.
- Fill tortillas with your favourite combo of toppings and enjoy!

This is one of my go to weekly meals. It’s quick, easy, delicious and healthy! I generally use the Twosie Con Carne recipe on this website as my filler for the burritos. Tastes amazing and and easy way to use up veggies in the fridge. Highly recommend!

I love this meal. My partner and I have made a habit out of making it quite regularly. Its very yummy and super easy to make. If you want to add more veggies I’ve started grating carrot, zucchini and other veggies in with the mince đŸ™‚
