Beef Stroganoff

When it came to food, my mum thought I was a picky eater. Turns out she was mistaking me for her other son - who wouldn't eat anything that had or been near tomato. Eventually it dawned on her I was happy to try new foods and her beef stroganoff was the meal that I had "the talk" with her about - as in.... The talk where I explained to her that I'm not a picky eater and her beef strog smelled AMAZING. When I finally moved out of home it was the first recipe I asked her to teach me and it has remained probably my centre piece dish. Impressed my friends, work colleagues - eventual fiance... it works so well. These days I have slightly adjusted the recipe so that it's not as calorie dense so it is in fact a healthy dish now! We recommend it as a "Inside The Window" dish as we often serve it with rice or pasta but you can get away with doing it with salad only!

Ingredients
  

  • 1 kg Rump Steak Sliced thinly
  • 1 large Brown Onion thinly sliced
  • 1.5 cups Mushrooms thinly sliced
  • 1-2 tbsp Beef Stock powdered
  • 250 ml Sour Cream
  • 250 ml Cream light
  • 1 tbsp Gravox or equivalent gravy making powder to thicken

Method
 

  1. Start by slicing your steak into thin strips ala stir fry. The thinner the strips the quicker the meat will cook.
  2. Turn on the stove and put a splash of extra virgin olive oil in.
  3. Once the pan is hot, pop the steak strips in start stirring them around
  4. While the steak is browning, start slicing your onion up into thin strips and avoid crying.
  5. Once the steak has browned up, add the onion to the pan.
  6. Thinly slice your mushrooms up.
  7. Add 1-2 tablespoons of beef stock to the pan. You should have some water from the steak at the bottom of the pan so you can use that to mix the stock into a brown liquid.
  8. Simmer for a 3 minutes and then add your mushrooms
  9. Simmer for another 5 minutes and now add your sour cream and light cream and mix them in. The sour cream will likely look a little piecey so you will need to thoroughly stir it in. Simmer for 5 minutes
  10. Get a small cup and ladel 2-3 table spoons of the liquid from the pan into it. Add 1 tablespoon of gravox and make a smooth paste. Add to the pan and stir in thoroughly.
  11. All to thicken for 5ish minutes. You should be ready to then serve with either some pasta or rice!

Adding this one to our regular meals list. I added spinach and carrots to it which worked really well.

This one is super tasty! The kids love it! Better yet super easy to make as well! ? always a plus in our household.

This is a favourite in our household! Very easy to make and super yummy. My partner has even started using chicken instead for something different 🙂 a must try!
