- 1 kg Beef Mince 2 x 500g packs of beef mince
- 2 cans Red Kidney Beans Well rinsed and drained
- 2 medium Brown Onion Chopped and diced
- 2 tbsp Minced Garlic You can also use 10 garlic gloves crushed and chopped too!
- 2 medium Capsicum Chopped and diced
- 2 cans Diced Tomatoes
- Extra Virgin Olive Oil For the pan/wok
- 2 tsp Rock Salt add more to taste if you're salty like Jon đŸ˜‰
- 2 tbsp Paprika
- 2 tsp Tumeric Powder is super easy
- 2 tsp Black Pepper ground
- 2 tbsp Cumin Seeds Ground up

- Heat up Wok or large pan and add a few splashes of Extra Virgin Olive Oil
- Add in your Beef Mince and stir occasionally to help it brown
- Extract your Red Kidney beans and pour into a colander and rinse thoroughly and allow it to drain.
- Chop up your onions and Capsicum and add them once the meat has browned.
- Crush and chop your garlic or simply add garlic mince to pan - I make a hole in the middle of the ingredients and put the garlic there so it has a chance to fry up a bit more.
- Gather up your ingredients for the spice mix and you can grind them all together with a Mortar and Pestle or you can pop it in a Magic Bullet or mini bullet and blitz them that way. If you get any residue left in the mixer after.. a quick splash of water in the cup can help loosen any left overs so they can be poured into the pan/wok.
- Add your Red Kidney Beans and Spice mix and stir.
- Add the 2 cans of diced tomatoes and stir into the pan to get a nice consistency.
- Leave to simmer for 5 minutes and BAM ready to serve!
Jon has made this for us a couple of times now and it is absolutely delicious. We do a spin on this quite often (every couple of weeks) with carrot and zucchini as well. 10/10 would recommend – one of my favourite meals.
Thsi recipe is one of my mental health recipes. What does that mean? It’s comfort food and what is even better is that it is a meal that is easy. It’s so basic to put together and then at the end I have so much of it, I can kinda rest easy in that I know I have meals ready for the rest of the week. It helps that the meal is DELISH too!
I love this recipe and I make it every few weeks. It is very versatile as you can have it in wraps or in a burrito bowl with rice or even with organic, healthy corn chips as nachos. Very easy and always delicious!

Added some extra sneaky veges to boot as well as some beef stock instead of salt and let it simmer gently for a few hours.

Awesome recipe which is so quick and easy. Great for crock pot cooking too, especially when you want to double the recipe! Even the fussy husband likes it:)
