Owen's Conveniently Not Spaghetti Spaghetti
It's like spaghetti only without the spaghetti in it. High in low fat protein with a lot of legumes. Convenient cooking, designed to be made up as a batch on a Sunday night to provide 5-6 high protein meals for the week.
Ingredients
Method
- Use a non-stick electric wok to reduce the need for oil. Cook the mince on medium heat till it is browned.
- Drain the cans of beans and add to the mince and stir it in. Let it sit on the medium heat for a a few minutes while you clean up the cans into the recycling.
- Add the can of crushed tomatoes and garlic paste and stir. Put the heat to simmer and put a lid on it, stir occasionally. Clean the kitchen or be super efficient and hard boil some eggs and/or do another food preparation for about 10-15 minutes.
- Dish up 6 servings into microwave safe containers, but don't put a lid on them till they stop steaming to prevent ice. Store in the fridge for easy reheat. Can be frozen if you intend to store for longer than a few days.
Notes
I normally use this one as convenient bulk dietary protein throughout the day when I'm in range of a microwave. If I have a few of these in the fridge, I've got not excuse to skip meals and/or eat something expensive.
Often I'll supplement this with a box of leafy greens, or if I've got a microwave bag of frozen vegetables, I'll just add those in just prior to eating.
I've found this to be "safe" food for not triggering IBS.
You can also use this as a real spaghetti base. If you want to trick someone into eating a healthier, use a blender on the beans prior to adding them to the mince - they can't tell it's turkey and legumes after the tomato paste goes in...
