I was never really one to like Sweet Potato. I think it comes back to when I was a kid and mum used to use brown potatoes for most meals. I would steal bits from the chopping board and yes.. eat the potato raw. Weird? Probably!
Anyway, this recipe has shown me the light of how easy cooking can be and how delish sweet potato can taste!

- 2 Large Sweet Potato Sliced into 1/2cm slices
- 1 tsp Cumin Seeds To be grounded up
- 1 tsp Sea Salt To be ground up
- 1 pinch Black Pepper Optional
- 3 tbsp Extra Virgin Olive Oil

Instructions
- Turn on your oven and set to 250 degrees C
- Grind up your spices. Use a mortar and pestle but I use my magic bullet. Much quicker and less hassle!
- Slice up your sweet potato into thin 1/2 cm sizes slices. If they are cut too thick, it will take longer to bake them.
- Pour your Olive oil into a bowl and pour your potato slices in there and ensure that all slides of the slices get some oil on them.
- Arrange your Sweet Potato slices onto a aluminium foil lined tray. Ensure they are all laying down and try not to overlap them.
- Sprinkle your ground up spices over the top of them. Ensure the seasoning makes onto the slices!
- Cook for approximately 30-35min. Depending on how good your oven is! Our oven is Pants so it can take up to 40min.
- Remove when golden brown and serve as a delicious carbohydrate option to a meal!
