Loco Moco
The Loco Moco is a dish that is often featured in Hawaiian cuisine. I encountered the loco moco when I visited Hawaii in 2008. I was apprehensive at first as it had traditionally had a slab of spam in it. But I soon realised you could have a meat patty instead. The problem with the Hawaiian version is the portion size. They. Are. MASSIVE. But they don't need to be! This version is a much smaller but still satisfying as when you break down the ingredients - it's not that it's really unhealthy - It's quite the opposite!

Instructions
  1. Place your mince in a large bowl.
  2. Slice and dice your onions and place in the bowl with mince
  3. Take 1tbsp of paprika and crack one egg over the mince.
  4. With your hands, get in and mix up the mince, onions and paprika, using the egg as a binding agent.
  5. Roll chunks of mince mix into balls. You should end up with 9-10 mince balls.
  6. Turn on your cooktop to a medium high. Splash in some Extra Virgin Olive Oil.
  7. Squish each mine ball into a flatter patty and place in the pan and allow to fry for 3-4 minutes. Place a lid over the pan.
  8. While your first lot of patties are frying.. place 1 tin of diced tomatos into a pot. Put the stove on a medium high temperature.
  9. Put 1 tablespoon of paprika and Turmeric into the pot and stir in.
  10. Place 1-2 tablespoon of salt into the sauce and stir.
  11. Allow your sauce to simmer for approximately 5minutes
  12. In the microwave, place your second family pack of rice and microwave for 2 and a half minutes.
  13. Turn over your patties so they are cooked on both sides and cooked all the way through.
  14. In a separate pan, start frying up your eggs. 1-2 eggs at a time. Try to keep them separate. so they are easier to then place on top of your loco moco.
  15. By as you fry your eggs, your tomato sauce should be taken off the stove and your second round of mince patties should be in the process of being fried. Try and get the eggs so that they still have a small amount of runniness to the yold before removing.
  16. Once all your meat patties are fried up and cooked through, remove them from the pan but add in 2 heaped tablespoons of Gravox and approx 150ml of water. Stir in and allow to.. I don't know.. gravify.
  17. Chop up your Spring Onion. You will need these at the end to dress the meal.
  18. In the microwave, place 1 family pack of rice and microwave for 2 and a half minutes.
  19. To serve, place a 2 heaped Tablespoons of rice into a small bowl.
  20. Place your beef patty on top.
  21. Spoon a Tablespoon worth of Gravy over the meat patty.
  22. Place the Egg on top.
  23. Spoon a Heaped Tablespoon of Tomato Sauce on top.
  24. Sprinkle Chopped Spring Onion to make it look pretty and stuff.
  25. Serve and enjoy!
