When in Hoi An, I do overdose of Cao Lau. And rightfully so because it is DELICIOUS. The prep and cooking of it though would make it a rather rare dish though since it does require a fair bit of prep and cooking time. BUT THAT FLAVOUR.. UGH.

So! I promised I would try and replicate that flavour and streamline it down into a cooking style that works for me but without sacrificing that nom nom nomminess.

Yeah it’s not a word but deal with it!

I have no shame about my love of pumpkin but I have to admit, the way Americans obsess over their pumpkin pie and pumpkin spice recipes ESPECIALLY around Halloween made me curious to conjure up a smoothie for us all to enjoy – and I’m so glad I did!
To be prepped for this recipe, you will need to have baked or boiled the pumpkin up beforehand. You can do this and then pop the servings into freezer bags to keep them ready to be used!

This dressing has evolved ever since one day I boughta BBQ Chicken from Coles for the first time since returning from the USA and they had changed the packaging.. it not looked like a chicken in a hand bag hence the name. Since it now had a fancy name.. I figured I better make a fancy dressing to go with it!

Now as time has gone by, this dressing has certainly had more things added to it but when it started, it was only

2 tbsp of extra virgin olive oil
2 tbsp of balsamic vinegar
2 tbsp of honey
1 tbsf of minced garlic
1 tsp of mixed dried herbs

I’ve since added and mixed it around some since then but it certainly has got better the more I played with it!
