Morning Glory
While travelling in Vietnam - I am not exactly the most adventurous person when it comes to trying new foods. I am pretty set in that I don't do hot and I don't do spicy. Odd name? Yeah.. I'll pass. However eventually we tried Morning Glory which is the fancy name they give to water spinach! Stir fried with garlic and a touch of fish sauce, this side dish was almost a non-negotiable when it came to our lunch and dinners. Super quick and easy - This dish is also healthy! The trick to this one is finding it - you are unlikely to find it in your supermarket BUT if you check with your green grocer/fruit and vege shop - they may have some. Alternatively your local farmers market will have it - especially if you are on the southside of Brisbane!

  1. Heat Wok to hottest setting and then put your oil in.
  2. Put chopped Garlic in and stir fry quickly (don't let it brown) and then add chopped Water Spinach.
  3. Once Water Spinach is in the wok - pour in your tablespoon of Fish Sauce.
  4. Stir fry ingredients together quickly and then remove the Water Spinach after 50-60 seconds. It should just be starting to wilt and look glossy and bright green Do not overcook it! It will continue to cook after you have removed it.
  5. Place on your favorite plate, serve and enjoy!
