Hoi An Pork Mince
When in Hoi An, I do overdose of Cao Lau. And rightfully so because it is DELICIOUS. The prep and cooking of it though would make it a rather rare dish though since it does require a fair bit of prep and cooking time. BUT THAT FLAVOUR.. UGH. So! I promised I would try and replicate that flavour and streamline it down into a cooking style that works for me but without sacrificing that nom nom nomminess. Yeah it's not a word but deal with it!

  1. Chop your Lemon Grass, Turmeric and Chilli into small pieces. Be sure to cut the base off and smash the lemongrass. Pull the heart out of the base of the piece of lemongrass you plan to chop up.
  2. Place chopped ingredients in a mortar and pestle and begin bashing it into a nice moist mixture. You won't be able to completely mash up the lemongrass. Give it all a good mashing and focus on the turmeric and chilli.
  3. Once suitably mashed, place the mixture into a large bowl.
  4. Put your honey, Chinese Five Spice and soy sauce in and mix well.
  5. Place the 1kg of pork mince into the bowl and combine the mince and spice mixture together.
  6. Let the mince sit for about 5 minutes. While sitting, you can get your other ingredients out from the fridge.
  7. Heat your wok up and put in some Extra Virgin Olive Oil.
  8. When bubbles appear in the oil when pressing your spoon against it, place your mince mixture in the wok and proceed to let it brown. Stir occasionally to get it nicely browned.
  9. Add 3 cracked eggs and stir them in.
  10. Blend 3 Tomatoes and then pour mixture into the wok. Stir through. Leave to simmer for about 5-10min on a medium heat.
  11. Cook your Rice in the microwave and then add to mixture
  12. Chop up your red cabbage and place in the wok. Mix it in.
  13. Add in your Bean Sprouts. These only need to be in there about 45 seconds before the whole dish is ready to serve.
  14. If you want your dish a touch saltier, add in some more soy sauce to taste.
  15. Plate up, place a small sprig of mint and basil on top and sprinkle some Salted Peanuts on top!
